INGREDIENTS 1 box brownie mix 8 oz cream cheese softened 1 egg 1/4 cup sugar INSTRUCTIONS Prepare the brownies as directed by the box. Reserve about a cup of the brownie mix before pouring the rest into a greased 9×9 dish. In a separate bowl, blend together the cream cheese, egg and sugar mixture. Pour the cream cheese mixture across the surface of the brownie mix. Pour the reserved brownie mix over the cream cheese. It doesn’t have to be neat- you’re going to do the swirls after this. Using a toothpick or knife, gently swirl the cream cheese mix around into the mix. Bake for the amount of time directed on the box + 25 minute

With our backyard lemon tree making meyer lemons faster than we can pick them, everyone also got a handful of lemons as a parting gift. Another thing I love about this meal is its vast flexibility. Like any dump soup, you can add just about anything you want with minimal impact on flavor. If you don’t love veggies or have a picky eater in the house, this could be a great way to mask cauliflower, broccoli, zucchini, or other vegetables you can finely chop. As you’ll see in the video walkthrough at the end, I was fully prepped and cleaned in less than 20 minutes. If you include the simmer and packaging time, you’ll need around 30 minutes total. The Best Damn Lasagna on Earth! Which brings me to my first rant: ricotta. Ugh, I’ve had so many ricotta fails, it’s silly. And if the ricotta sucks, the dish sucks. I’ve poured over so many recipes and they all do it different. Some say include it in every layer, some say every other layer. Does it go before or after the sauce? What do you mix with it? How do you just make it work??? I’ve tried a bunch of different techniques and have found 3 critical pointers: 1. Dry out your ricotta. If it’s too wet, it will make your lasagna sloshy. To accomplish this I spread the ricotta on a plate and put a couple of paper towels over it for an hour or two. It’s surprising how much water is in the cheese. I replaced the towels a couple of times each layer was well soaked after 15 minutes! When I started to work with the cheese, I noticed a significant difference in the texture. 2. Only have 1 layer of ricotta. Many recipes say there should be a ricotta layer in between each set of noodles. This b
